Summer's End Ratatouille

Ingredients:

- 2 onions
- 2 cloves garlic
- 1 eggplant 
- 1 zucchini
- 2 green peppers
- 8 small tomatoes
- 2 sprigs fresh rosemary
- olive oil
- salt, pepper

Directions:

Preheat oven to 350 degrees.  Chop garlic & onion first, lay into baking dish.  Chop remaining ingredients, toss with olive oil, salt & pepper.  Toss veggies to ensure all are coated with oil.  Cover baking dish with foil and bake @ 350 for 45-50 minutes.  Remove foil & bake for additional 30 minutes without foil cover.  Serve with meat, pasta, and more!  Serves 5 hungry people.
